Pinoy Frozen Brazo de Mercedes

Frozen Brazo de Mercedes Recipe is a twist from the classic dessert in the Philippines called Brazo de Mercedes which is of Spanish origin that means “Mercedes’ arm” for the reason that it is roll shaped and looks like a woman’s arm. Frozen Brazo de Mercedes is made with graham crackers, ice cream, custard and meringue. 



Pinoy Frozen Brazo de Mercedes

Ingredients

MERINGUE SHEET

  • 10 Egg whites
  • 1 Teaspoon cream of tartar
  • 1 Cup sugar
  • 1 Teaspoon vanilla
CUSTARD FILLINGS
  • 10 egg yolks
  • 1 Can sweetened condensed milk
  • 1 Teaspoon vanilla
CRUST
  • 1 Cup Graham cracker crumbs
  • 1/8 Cup sugar
  • 1/2 Cup melted butter
  • 2 Cups ice cream
Cooking Instructions


MERINGUE SHEETS

  1. Separate egg yolks from white
  2. Grease the prepared baking pan, line with wax paper on top and grease the surface.
  3. Put egg whites in a large mixing bowl, beat until frothy.
  4. Add the cream of tartar, beat at high speed until soft peaks form.
  5. Add sugar gradually while beating , until the meringue becomes very stiff, add vanilla.
  6. Spread the meringue evenly, on prepared pan lined with wax paper.
  7. Using a serrated edge knife, make a wave pattern over the surface.
  8. Bake the meringue in a preheated oven to 350 °F, for 20 minutes or until turns to medium brown.
CUSTARD FILLINGS
  1. Put milk in a heatproof bowl, place over a saucepan of simmering water.
  2. Add egg yolks and whisk until mixture thickens, add vanilla extract.
  3. Turn off the heat.
CRUST
  1. Pulse Graham crackers until crumbs.
  2. Combined Graham cracker crumbs and sugar.
  3. Add melted butter, mix well until blended.
  4. Press onto the bottom of 9 inch round pans.
  5. Bake at 300ºF for 7 minutes, set aside and chill.
ASSEMBLY
  1. Spread custard filling over the chilled crust, refrigerate until firm.
  2. Add a layer of softened ice cream.
  3. Place meringue over the ice cream layer.
  4. Cover with foil and freeze before unmolding.
Cooking Tips
  • Cut meringue to fit into the pans.
  • Dust the top of meringue with confectioner’s sugar or cornstarch and gently brushing it away with a brush.
