Pako is a fiddlehead fern similar to the flavors of watercress but not as peppery. It has a slight crisp texture to it which makes it a very interesting and nutritious salad. Sourcing pako tends to be a challenge so when you find a supply at your local market, grab them the chance.
Ensaladang Pako(Fiddlehead Fern Salad)
Ingredients
THE VINAIGRETTE:
- 1 kg. pako (fresh fiddlehead fern)
 - 200 grams tomatoes, sliced
 - 1-2 salted eggs, sliced
 
- Cut the tips of the fiddlehead fern, about 4 inches from the top. Discard the tough stems. Wash and spin-dry or wrap in paper towels.
 - Wash tomatoes and cut into wedges.
 - Peel salted egg and slice into thin wedges.
 - Arrange pako with tomatoes and salted egg on salad plate. Drizzle with vinaigrette and serve.
 
THE VINAIGRETTE:
- 1/3 cup white vinegar
 - 1/3 cup olive oil
 - 1/2 tsp. salt
 - 1/4 tsp. ground black pepper
 
- Combine all ingredients in a bowl.
 - Whisk together until emulsion forms.
